Cran-Orange Acorn Squash



This is my favorite slow cooker dish yet! Healthy, yes. Easy, yes. Quick, yes. Yummy,  Yes! Yes! Yes! I am excited for my children to grow up looking forward to the nights when this is for dinner.

I will let this meal do the talking for itself and simply give it my stamp of approval. I found that only two acorn squash fit in my crock pot at a time, which is fine because I preferred to have greater amounts of filling per squash anyways. Also, the cooking time took longer for me than directed, so you may have to experiment! Now if you will excuse me, I have some squash to devour.

An Updated Update

Excitement and terror. Those two feelings were playing a heated game of Tug o’ war on my uncertain state of mind. Then, they met up with thankfulness and guilt, for a round of doubles. We were leaving the NICU. Why the battle of emotions? Here is the current update on Annette, Charlotte, and the rest of us Prescotts.  No more goodbyes and counting the days until we will see the boys next; this week we got to go home! It happened so fast. During the weekend we trained how to insert and maintain Charlotte's NG tube on our own, and then, badda-bing, badda-boom, we were discharged! We gathered our belongings and walked straight out the door with baby girls in tow, just as I had imagined it from inside alcove #3553, for 47 days. It would have been all sunshine and roses too, if not for the previous day. The baby didn't make it.
